RECIPE: Waldorf Salad

The Waldorf salad was first created in 1893 at the Waldorf Astoria Hotel. Originally, the salad contained apples, celery, and grapes bound in a mayonnaise dressing. Later, walnuts were added and the grapes were replaced with raisins or sultanas. Here is how to make a simple and delicious Waldorf salad.

Ingredients for Waldorf Salad

  • 2 apples, cored and chopped
  • 2 sticks of celery, thinly sliced
  • 1 cup of walnuts
  • ¼ cup sultanas
  • 6 tbsp mayonnaise
  • 1 tbsp lemon juice
  • Salt and freshly ground black pepper

How to Make Waldorf Salad

  1. Core and chop the apples and slice the celery before adding to a mixing bowl.
  2. Chop the walnut halves and add these to the mixing bowl along with the sultanas.
  3. Put the mayonnaise into the mixing bowl and stir to bind the ingredients together.
  4. Add the lemon juice, salt, and freshly ground black pepper.
  5. Stir well before transferring to a serving bowl for sharing, onto salad leaves in individual portions, or on to plates as an accompaniment.

A Quartet of Picnic Salad Ideas

During the summer months, most people prefer to eat lighter meals than in the winter months.  Salads can be an ideal choice and are a particularly good choice for packing into your picnic hamper.  When thinking of salads, the first thing that springs to mind is a bit of lettuce and cucumber thrown together.  However, salads can be so much more than this and there are numerous possibilities of salads that can be packed for your fun, summer picnic.  It is also possible to take a variety of different salads with you on your picnic as they can easily be stored in plastic tubs.  Here is a quartet of picnic salad ideas.

Tricolor Salad

Salads can sometimes look boring, especially if they only consist of green items.  A tricolor salad looks much more appetizing as it is colourful and looks appealing.  A tricolor salad traditionally contains three colours, usually red, green and white.  A traditional Italian version of this is sliced mozzarella, sliced tomatoes, and basil. However, you can adapt this salad using your own ingredients sticking to the theme of red white and green.

Potato Salad

This a popular variation on a salad dish and can be made in many ways.  The basic of the salad is cold, chopped, boiled new potatoes that are bound in mayonnaise.  Other ingredients are then added.  Popular choices for ingredients are onion, sweet corn, herbs, and pepper.  Other people prefer to keep it simple by simply adding some chives or seasoning to the potatoes and mayonnaise.

Tuna Pasta Salad

This is another salad dish of which there are many variations.  Tuna pasta salad is one popular variation of a pasta salad dish and is made by adding tuna and sweet corn to cooled, cooked pasta.  While some people bind this combination in mayonnaise and add black pepper, others prefer to use a tomato-based sauce.  If you do not like sweet corn then this can be substituted with some chopped peppers or tomatoes, or a combination of both. An adaptation of tuna nicoise is another way to make tuna pasta salad by combining pasta with tuna, olives, and hard-boiled eggs. 

Couscous Salad

This is a really simple and quick salad to make as well as being tasty.  Simply cook the couscous in accordance with the instructions then add chopped cherry tomatoes, sultanas, feta cheese cut into cubes and diced cucumber.  For a little extra taste to the salad add some freshly ground black pepper, some chopped spring onion or a squeeze of lemon juice.

RECIPE: Stilton and Walnut Salad

Now that we are getting to the warmer months, salads become a more inviting option. While many people often think of salads as a boring and tasteless dishes, there are many ways of adding extra flavours and textures if you get creative. One tasty option is a stilton and walnut salad. The stilton adds a creamy texture and a rich flavour while the walnuts add nuttiness and crunch. Here is how to make a simple stilton and walnut salad for four people. 

Ingredients for Stilton and Walnut Salad

  • 1 bag of salad leaves (or equivalent salad leaves of your choice)
  • 12 cherry tomatoes
  • 1/2 red onion
  • 1/2 cucumber
  • 10 oz/ 250g Stilton
  • 4 oz/ 110g walnut pieces
  • 4 tbsp balsamic dressing

How to Make Stilton and Walnut Salad

  1. Slice the red onion, halve the cherry tomatoes, dice the cucumber and chop the walnuts.
  2. Divide the salad leaves equally over four plates and share out the tomatoes, cucumber, and red onion between the plates. 
  3. Crumble the cheese over the salad leaves equally. 
  4. Sprinkle with the chopped walnuts. 
  5. Drizzle 1 tbsp of balsamic dressing over each salad. 
  6. Serve on its own or with a chunk of granary bread.
